Conventional Oven Method
Preheat oven to 325°.
For best results, cook your roast approximately 20 minutes per pound.
Cover the roast with foil.
Use a meat thermometer to determine doneness:
     Rare - 110°
     Medium Rare - 120°
     Medium - 140°
     Well Done - 165°



500 Degree Method

Set your prime rib on a plate and bring it to room temperature. (2 to 4 hours) **This is critical for proper cooking time.**

Preheat oven to 550°.
Multiply the weight of your roast by 5 minutes (for medium rare). I.e. if your roast is 5.24 pounds, multiply 5.24 x 5 = 26.2. Cook for 26 minutes. Round up or down depending on your number, and that is how long you'll cook the roast.
Bake uncovered.

Cook Time:
     Medium Rare - 5 minutes per lb.
     Medium - 6 minutes per lb.
     Well Done - 7 minutes per lb.

Set the oven timer for minutes based on doneness you prefer.
When time is complete, turn OFF the oven and let roast sit in the oven for 2 hours.
Do NOT open the oven door!
When the two hours is up, remove the roast, slice and serve.
