Petite Cheesecakes
(Makes 36)
Note: You need to use 2-inch diameter mini muffin pans.
36 - 2-inch diameter cupcake liners
36 vanilla wafers
2 - 8 oz. packages cream cheese, softened
¾ cup sugar
2 eggs
1 Tablespoon lemon juice
1 teaspoon vanilla
1 can Wilderness® Cherry Pie filling
Line mini muffin pans with paper liners. Place a vanilla wafer in each. Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill cups 2/3 full with cream cheese mixture.
Bake at 375o for 10-15 minutes or until set. Top each with spoonful of pie filling. Chill until served.
