1 lb. sauerkraut, drained
1 teaspoon caraway seed
2 cups shredded Monterey Jack Cheese
½ cup Thousand Island dressing
½ lb. thinly sliced cooked corned beef (Refrigerate, much easier to slice)
4 cups rye bread, cut into ½ inch cubes (about 4 slices)
⅓ cup butter, melted
2 Tablespoons fresh parsley
Heat oven to 375°. In 8x8 pan, layer:
Sauerkraut, caraway, 1 cup cheese, Thousand Island dressing, sliced corned beef, and remaining cheese. Toss bread cubes with melted butter, sprinkle over top.
Bake for 35-40 minutes. Sprinkle with parsley.
For 9x13 pan, double all ingredients.
