Barbecued Spareribs
6 pounds pork spareribs
1 Tablespoon salt
1 cup ketchup
½ cup water
2 Tablespoons cider vinegar
2 Tablespoons Worcestershire sauce
1 Tablespoon brown sugar
1 Tablespoon coarse ground mustard
1 Tablespoon dry mustard
1 teaspoon chili powder
1 teaspoon paprika
½ teaspoon crushed red pepper
½ teaspoon pepper
2 medium onions, sliced
Step 1: Cut ribs into serving size pieces. Place in an 8 or 10-quart Dutch oven. Cover with water. Add salt. Bring to boiling. Reduce heat. Cover and simmer 40 minutes. Drain.
Step 2: In a medium saucepan, combine ketchup, water, vinegar, Worcestershire sauce, brown sugar, mustards, chili powder, paprika, red pepper and pepper. Bring to boiling. Reduce heat; simmer, uncovered, 15 minutes.
Step 3: Arrange onion slices in the bottom of an 18x12x2-inch roaster pan. Place cooked ribs on top of onions. Spoon barbecue sauce over ribs.
Step 4: Cover and bake in a 350° oven 1 hour, uncovering ribs for the last 15 minutes. Remove ribs to a serving platter. Serve with carmelized onions from bottom of roaster.
