Aunt Joyce's Pan Fried Chicken

Chicken pieces
Flour
Salt
Pepper
Wash chicken.
Dredge in flour with salt and pepper.
(Other seasonings of your choice can be put into the flour).
Use Crisco oil, putting a good bit of oil into a deep frying pan, getting oil very hot.
Place chicken parts into fryer. Don’t crowd the chicken.
Cook until golden brown on one side, then turn over to the other side. ONLY turn chicken once. That's why the grease has to be very hot - so that it cooks thoroughly on the one side. If you continue to turn the chicken, it dries out.
When finished frying, you can drain the grease off on a plate with paper towels, or leave grease on the chicken. Whatever you like best.
