Taco Soup

2 lbs. ground beef
¼ cup chopped onion

Brown ground beef and onion, then drain.
Transfer to a 5-quart crock pot, then add all other ingredients.

1 can corn (drained)
1 can kidney beans (drained)
1 can chili beans (undrained)
1 can petite diced tomatoes (undrained)
1 can RO-TEL (undrained)
1 lb. (16 ozs.) block of Velveeta cheese (cubed)
1 packet Old ElPaso taco seasoning
1 packet Ranch seasoning
1 cup water

Cook on low 4-5 hours, or until heated through and cheese is melted.

Serve with your favorite taco condiments, i.e. sour cream, shredded cheddar cheese, onions, tortilla chips.
