Mini Cheesecakes

(Makes 36)


48 mini cupcake liners
48 mini vanilla wafers
2 - 8 oz. packages cream cheese, softened
¾ cup sugar
2 eggs
1 teaspoon vanilla

2 cans Wilderness® Cherry Pie filling

Line mini muffin pans with paper liners. Place a vanilla wafer in each. Beat cream cheese, sugar, eggs, and vanilla until light and fluffy. Fill cups 2/3 full with cream cheese mixture.

Bake at 350o for 18-20 minutes or until set. Chill for two hours in the refrigerator.

When ready to serve, top each with spoonful of pie filling or topping of your choice.
