Fried Potatoes

6-8 medium potatoes, peeled and thinly sliced
3 Tablespoons shortening
1 teaspoon salt
½ teaspoon pepper
1 cup chopped onion
¼ cup water
Heat shortening in large skillet. Add sliced potatoes, salt, pepper and onion.
Fry on medium-low heat, stirring potatoes up from the bottom as they brown.
Fry about 15 minutes.
Add water and cover tightly.
Cook over low heat until potatoes are tender, stirring occasionally.
